ISK's Rabbit Special

There are two ways to do this dish:



1. Drink heavily with friends before taking a powerful torch and a 20 bore out into a nearby field to shoot your rabbit, whilst trying to avoid injuries which might make the local paper. or...



2. Get the following from the shops/kitchen (to serve a party of 6-8 people):



Booze

Marlboro Lights

2 rabbits, cut into serving pieces

2 tblsp. olive oil

2 onions, sliced

2 cloves garlic, minced

6 carrots, peeled and sliced

1 lb. fresh mushrooms, sliced

2 tbls. fresh parsley, minced

ᄐ tsp. thyme

ᄑ tsp. oregano, rubbed

4 bay leaves

2 cups dry white wine

Salt and pepper

Flour



1. Open a reasonable bottle of drinking plonk. Also works well with Wychwood real ales, particularly Hobgoblin.

2. Consume majority of above, season with ciggie.

3. Preheat oven to 350ᄎ. Season the rabbit pieces with salt and pepper and coat with flour.

4. Put the oil, onions, garlic, carrots and mushrooms in large casserole dish.

5. Place the rabbit on top of the vegetables. Sprinkle with the parsley, thyme and oregano.

6. Finish booze, add ciggie to taste

7. Add the bay leaves and wine. Cover and bake for 1 hour or until rabbit is tender.

8. Remove bay leaves before serving.
