Spicy Red Bean Lasagne

1 large onion,
2-3 cloves of garlic
one green pepper
2 x 400g tin of plum tomatoes
410g tin of red kidney beans
Chilli powder, or fresh chilli finely sliced.
at least 1 large glass of red wine
pinch of cumin powder
pinch of corriander powder

other veg can also be used. I like mushrooms in it.

~300g Fromage Frais
~300g (Plain) Natural Yoghurt
~200-250g strong cheese, cheddar or similar is fine

fling the onions garlic fresh chillis (and mushrooms if you're having them) in the pan and soften over a medium heat(fry the freakers) with the cumin and corriander (and chilli posder if thats what you're using), once soft add the cored and sliced (strips not cubes please) green pepper, the washed kidney beans and the tomatos, with a glass of wine. reduce it a bit til it starts to look like a pasta sauce.

layer the sauce in the lasagne dish (sauce, lasagne, mixed fromage frais and plain yoghurt). you can use white sauce like a normal lasagne, but this is the way i do these ones.

fling a load of grated cheese on the top layer of the yoghurty mix, and perhaps some olives if you're feeling saucy.

do i the oven for as long as it take the lasagne to cook. serve with tasty wine, green salad and garlic bread
