Raita (poofs curry aid)

Raita

Yogurt (greek or natural)
Cucumber (very finely chopped)
Corriander (chopped)
Cumin seeds
Mustard seeds

Toast the Cumin & Mustard seeds either in a dry frying pan or under the grill.
Put the cucumber, corriander and cumin & mustard seeds into the yougurt.
Leave to sit in the fridge for as much time as you have (ideally 1 day).

Sprinkle some more chopped corriander or mint on the top and serve.

You could fry the seeds in a little oil and add some turmeric & curry leaves for colour & flavour in you prefer.
