Veggie Nut Roast

Basically youre going to create a type of rich bread-crumb stuffing. To get the authentic Sunday Roast flavour in the absence of meat youll need to use a fair amount of stock-type flavours.

Ingredients:

Onions
Mushrooms - wild ones are best, even use the dried wild ones
Celery
Fresh / dried herbs  e.g. parsley, thyme, sage, rosemary
Breadcrumbs
Egg(s) for binding it all together
Chopped nuts
Any other veg you have knocking about  e.g. carrots, aubergine, parsnip, asparagus, beetroot (fresh), etc.
Worchester sauce (check if it contains anchovies)
Mushroom Ketchup


Fine chop some onions, celery and mushrooms (wild ones are VASTLY superior, if you can get them) and sweat them off for 10 minutes. Add some garlic / chilli if you like but theyre not what Id consider Sunday-Roast flavours.
In a big mixing bowl bind the breadcrumbs, mushrooms, onions and the other ingredients with a beaten egg. Use yer hands ye massive flid!

Lash the lot into a pre-greased roasting tin, cover and pt in oven with yer spuds for about 20 minutes.

Thats it.
