Thai Green Risotto

Thai Green Risotto

1 Onion (red)
2 Cloves Garlic
500g Risotto Rice
a glass of wine ( white)
A bunch of baby spring onions/scallion (roughly chopped)
Thai Green Curry Paste (1tsp)
825ml of stock
a handful of tiger prawns (raw)
250g mascarpone
a shit load of decent quality parmesan

1) Gently fry onions and garlic for a couple of mins then lob in the rice and stir for another min or so.

2) Chuck in half a glass of wine, a bit of stock and the Thai Green Curry paste.

3) Continue to slowly add stock at regular intervals for about 20 mins or until rice is cooked.

4) Lob in yer scallions and prawns and continue to simmer for 4-6 mins.

5) Chuck in yer mascarpone and stir around, then add a decent amount of grated parmesan.

6) Season

7) If you've a bit of lemon, squeeze it in (not essential)

8) Serve with big glass of wine.

9) Watch Arsenal beat spurs.
